Now, the classic sandwich is great, but we’re grown-ups now (mostly 😉), and we need a protein-packed, nostalgic upgrade that we can eat guilt-free for breakfast.
Say hello to the PB&J "Thumbprint" Breakfast Cookies!
These cookies are basically a cheat code for a healthy morning. They’re super soft, packed with peanut butter (hello, protein and healthy fats!), and have that perfect sweet center of jelly. They’re a nostalgic upgrade to the school-lunch classic, and the best part is they come together in one bowl. You can make a batch on Sunday and grab one on your way out the door every day this week.

The PB&J Breakfast Cookie Recipe
This recipe is flourless and uses simple ingredients, making it totally healthy enough for breakfast.
What You Need (The Cookies):

1 cup Creamy Peanut Butter (natural, no-stir kind works best!)

1/2 cup brown sugar, packed (you can use coconut sugar for a healthier swap)

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

For the Thumbprint: 1/4 cup of your favorite fruit jelly or jam (strawberry is my favorite!)
The Simple Steps:

Mix the Dough: Preheat your oven to 350°F (175°C). Line a baking sheet with non-stick parchment paper. In a big bowl, use a fork or a wooden spoon to mix the peanut butter and brown sugar until it’s totally smooth.

Add the Wet Stuff: Stir in the egg, vanilla extract, baking soda, and salt until everything is combined and you have a thick, scoopable dough.

Scoop & Press: Roll the dough into 12 small balls (about 1.5 inches each) and place them on your baking sheet. Use your thumb (or the back of a small measuring spoon) to gently press a little "well" into the center of each cookie.

Add the Jelly: Spoon a small amount of jelly right into the center of each thumbprint well. Don't overfill it, or it will spill out!

Bake & Chill: Bake for 10–12 minutes. The cookies will look soft and a little puffy. Let them cool on the pan for 5 minutes before moving them to a wire rack to cool completely. They firm up as they cool, giving you that perfect breakfast texture.
