Hey, tea drinkers and treat lovers! It’s April 9th, and we are celebrating one of the best baking holidays: Chinese Almond Cookie Day! Those classic cookies are amazing, but today we’re taking the almond and giving it a sophisticated, global twist.
We’re making "Silk Road" Almond & Cardamom Shortbread.
This cookie is pure elegance. It has that amazing, buttery melt-in-your-mouth texture of shortbread, but the subtle, nutty crunch from the almonds and the warm, exotic spice from the cardamom make it taste like a long journey across the Silk Road. It's the perfect, simple, nutty crunch to pair with an afternoon tea or coffee. This is how you feel fancy without any extra effort!

The "Silk Road" Shortbread Recipe
Shortbread is famous for only needing a few ingredients, but every single one matters. Don't skimp on the butter!
What You Need (The Goods):

1 cup (2 sticks) High-Quality Unsalted Butter Sticks, softened (room temperature is key!)

1/2 cup powdered sugar

1 1/2 cups all-purpose flour

1/2 cup finely ground Almond Flour (for the perfect tenderness)

For the Crunch: 1/4 cup slivered almonds
The Simple Steps:

Cream the Butter: Preheat your oven to 350°F (175°C). In a large mixing bowl, use an electric mixer to beat the softened butter and powdered sugar until they are light and fluffy (about 3 minutes).

Add the Dry Stuff: Whisk together the all-purpose flour, almond flour, cardamom, and salt in a separate bowl. Slowly add the dry mixture to the butter mixture and mix on low speed until a soft dough forms.

Press & Shape: Press the dough evenly into an ungreased 8x8 inch baking pan. Score the top of the dough with a knife, marking out 16 squares, but don't cut all the way through. Press the slivered almonds gently onto the top of the dough.

Bake to Golden: Bake for 25–30 minutes, or until the edges are light golden brown.

Cut & Cool: Immediately take the pan out of the oven and use a sharp knife to cut all the way through the score marks. Let the shortbread cool completely in the pan. They will be soft when warm but get perfectly crunchy when cooled.
