Hey, cheese lovers and spring flingers! It's April 11th, and you know what that means: it's Cheese Fondue Day! Now, usually, fondue makes you think of a cozy, dark ski lodge in the middle of winter. Boring, right?
We are officially moving the cheese party outside and into the garden with my recipe for The "Spring Dip": White Wine & Gruyère with Apple Slices.
This is the ultimate spring glow-up for a comfort food classic. It’s light, zesty, tangy, and still perfectly gooey and cheesy. We use a crisp white wine and amazing Gruyère, and instead of just bread (though you can totally use that too!), we’re dipping crisp apple slices, asparagus, and snap peas. It moves fondue out of the ski lodge and into the garden. It’s easy, it’s elegant, and it’s the perfect way to spend a sunny afternoon.

The "Spring Dip" Fondue Recipe
The secret to a perfect fondue is a little patience and a tiny bit of cornstarch to keep the cheese from clumping.
What You Need (The Goods):

1 clove garlic, cut in half

1 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)

1 tablespoon cornstarch

1 pound Gruyère cheese, freshly grated

1/2 pound Emmentaler cheese, freshly grated (optional, but it adds to the melt!)

1 teaspoon Dijon Mustard

1/4 teaspoon fresh nutmeg

For Dipping: Sliced green apples, bread cubes, par-boiled asparagus, and sugar snap peas.

Tools: A Stovetop Fondue Pot or a regular heavy-bottomed saucepan
The Simple Steps:

Prep the Pot: Grab your fondue pot or heavy saucepan. Rub the inside of the pot all over with the cut garlic clove. Seriously, this adds a subtle flavor bomb. Throw the garlic clove away.

Make the Slurry: In a small bowl, whisk the cornstarch into 2 tablespoons of your white wine until there are no lumps. Set aside.

Heat the Wine: Pour the rest of the wine into the pot and bring it to a gentle simmer over medium heat.

Add the Cheese: Turn the heat down to low. Add a handful of the grated cheese at a time, stirring constantly with a wooden spoon until it's completely melted and smooth before adding the next handful. Do this slowly! It should take about 5-7 minutes.

Thicken the Dip: Stir in the cornstarch slurry, mustard, and nutmeg. Cook for 1 minute, stirring constantly, until the fondue has thickened up into a silky, perfect dipping consistency.

Serve & Dip: Transfer the pot to your Fondue Warmer (or turn the heat way, way down). Arrange your spring dippers around the pot and start dipping. Cheers to spring!
